Good Morning Chefs and Buyers,
 
It's the start of a new week.  Hopefully you had a nice busy weekend and need to restock your walk-in.  We found some of those lovely Wild 4 to 6 pound Amberjack from North Carolina that we see from time to time.  Local Tuna looks amazing today.  Local Swordfish prices are down a bit too.  Soft-Shell Crabs seem to be in full swing.  The prices are down and they are available in all sizes.
 
U/10 and 10/20 Scallops from New Jersey couldn't be fresher today.  Wild Striped Bass from Virginia and Delaware have bright red gills and are pouring in here daily.  Razor Clams from Maine look very nice today as well.
 
West Coast Halibut seems to up and running.  We are bringing some in tonight and the price is down quite a bit.  The fish are going to be 10/20 or 20/40 pound sizes.  Please specify which size you want when ordering.  Believe it or not, aside from seeing Soft-Shell's so early, we are actually starting to see Wild Salmon.  Funny how a complete lack of winter will do that.  Steelhead is coming in from the West Coast.  Please order in advance.
 
Ecuadorian Escolar made an appearance today.  We hadn't been able to find any for a while.  5 to 7 pound Kingclip from Panama looks like it will make an excellent special when it arrives tonight.
