3.19.12

Good Morning Chefs and Buyers,

It's the start of a new week.  Everyone who isn't still hungover from St. Patrick's Day is sure to come out to dinner on a beautiful day like this.  We found some Local Blowfish Tails this morning.  These are always fantastic.  We recommend you order them in advance.  Beautiful Jumbo Black Sea Bass is in from Boston.  They weigh about 3 to 5 pounds each.  Wild Striped Bass keeps pouring in from Delaware and Virginia.  They are anywhere from 8 pounds all the way into the 20's.  Unfortunately, Lobsters are going to be a big problem until at least Wednesday.  The price shot up this morning, so please check your price list.

We have the first Grouper we've seen in a week in this morning.  They are very fresh Red Grouper from Panama that weigh 5 pounds and up.  Florida sent us more lovely Sturgeon today too.  16/20 ounce Lobster Tails are here from Australia.

The Great Lakes are starting to thaw.  This means we have some fresh Whitebait available.  Whelks and Razor Clams are set to arrive tonight from Maine.  It's rare that we get both at once, so this is a nice surprise.  Lump and Jumbo Lump Crabmeat from Louisiana is here today too.

Have a great day.
