3.12.12

Good Morning Chefs and Buyers,
 
It's a new week and with this early spring weather, we should all be nice and busy.  We brought in some wonderful items this morning and have more great stuff coming in tonight.  Wild Striped Bass keeps showing up daily.  They are a mix of fish from Delaware and Virginia.  They weigh between 5 to 8 pounds and we also have larger fish available.  Local Tuna and Swordfish are set to arrive tonight.  These come to us from boats that fish from North Carolina to New Jersey and they always send us super fresh items.  Although, it looks like #2 Tuna is still going to be an issue.  Fresh Local Octopus came our way from Long Island again.  They are about 2 pounds each. 
 
A fresh shipment of West Coast Oysters are heading our way.  We are going to be tight on Kusshi Oysters, but should be well stocked on everything else.  Medium Stone Crab Claws from Florida are available today.  Florida also sent us fresh 16/20 Shrimp from the Gulf.  These are always amazing quality.  Farm Raised Hiramasa from Australia look terrific today and are about 5 pounds.
 
Arctic Char made it's way back after being unavailable last week.  Dayboat Canadian Halibut is here.  We aren't sure how availability will be until the west coast opens.  Whelks from Maine look like a great option for a special today.  We also have more Gloucester Cod in this morning.  They are anywhere from 8 to 12 pounds and have the head off.
