3.1.12

Good Morning Chefs and Buyers,

Another weekend is fast approaching.  It's time to stock up on great seafood for the diner's who will come out to enjoy the warm weather heading our way.  Local Swordfish looks beautiful today.  Local 1 and 2+ Tuna is also here.  There is still no #2 Tuna available.  Huge head on Mahi Mahi came in from the same boats.  They are about 20 pounds each.  All of these fish come to us from boats that fish from North Carolina to New Jersey and ship directly our way.  We always get incredibly fresh fish from these guys.  U/10 and 10/20 Scallops look delicious today out of New Jersey.

Wild Striped Bass from Virginia are big today.  The fish are super fresh.  Delaware Wild Striped Bass season opens today as well.  We should start seeing nice fresh stuff from them soon.  Live Scallops in the Shell are here from Maine.  Maine also sent us beautiful Dayboat Cod.  The fish are quite large at 10 to 15 pounds each.  The good news is we tracked down some Halibut for tonight.  They are Dayboat 10/50 fish from eastern Canada.  The bad news is the price shot up on us.  West coast Halibut is opening up in the middle of March.  We should see more stable pricing then.

The Redfish from Texas look gorgeous.  They are 4 to 6 pounds.  If you want some, order early.  They are flying out of here.  5 to 10 pound Red Grouper have bright red gills this morning.  Fresh 16/20 Gulf Shrimp look amazing as usual.  Golden Tilefish from Florida is a can't miss today too.

"If I knew I'd live this long, I would have taken better care of myself." -Mickey Mantle
On this day in 1969, Yankees great Mickey Mantle retired after an amazing career that included 12 pennants and 7 World Series Championships.

Have a great day.
