Wild Edibles Newsletter 10-3-2013

Good Morning Chef’s and Buyers,

Beautiful Florida Pink Snappers just came in
today. The flesh is firm in texture, its delicate
flavor has gained the reputation as Florida’s
Premium Snapper. We are not sure how long
these will be around, better grab up now!

Today we have East Coast Halibut from Nova
Scotia. Halibut is distinguished by its Flat Shape
and Strange appearance due to the appearance
of its eyes. The firm white meat and delicately
sweet flavor of halibut, combined with its high
nutritional value, make it a favorite among fish
lovers.

Locally caught off the Montauk Coastline, Our
Wonderful Jumbo Black Sea Bass, these fish
weigh between 2-4lbs each. This fish has a
mild, fresh, somewhat delicate flavor and a
tender but firm texture. Please Note, this will be
last call for Black Sea Bass going into the
weekend, you must grab what you need now!

Still a Good amount of Bonito left not sure how
long it will last. Bonito is a fish with no scales
and a member of the Mackerel Family, it taste
great with light seasoning because the flavor
alone is delicious. Bonito is best served fresh
and it’s a dark fish similar to tuna and also
prepared like tuna.
