Good Morning Chefs and Buyers,


Branzino In House! 1000-1500 Grams! This is a
fish also known as the Mediterranean Sea bass.
The Branzino is similar to the Black Sea Bass in
texture. It has a mildly sweet and nutty taste.
The Bronzino can also be served as a whole.




Beautiful Sockeye Salmon, richly textured and
highly flavorful, Sockeyes are the Second
fattiest and they have the added benefit of
having the firmest texture of all Pacific Salmon.





Wild Stripped Bass Season is in Full Swing right
now in Maryland. This Fish has a very clean and
mild flavor with meat that has a firm texture.
The price will keep coming down once more
states are open and the warm weather is here
to stay.



Frozen Escolar, This firm white fleshed fish has
an incredibly rich flavor, often described as
“succulent”, or a fattier version of swordfish.
Why so rich? It turns out that Escolars diet
contains food high in wax esters. Wax esters
that are really difficult for Escolar to digest. As
a result, these esters build up in the fish.
