Wild Edibles Newsletter 8-13-2013

Good Morning chefs and buyers,

Red Grouper is in the warehouse from Florida. Grouper, a member of the Sea Bass family is found in warm tropical temperatures worldwide. Groupers are primarily accessible by hook and line.

In the warehouse is locally caught John Dory. This fish gets its prey by stalking other fish. It usually eats cuttlefish , squid, sardines, and schooling fish. Its firm textured white flesh is moist and flaky with a low fat content.

Coming in tonight we will have Razor Clams in the house. They are also known as bamboo clams or the American Jackknife. They are a large species of edible marine bivalve mollusk which can be found from North Atlantic from Canada to South Carolina as well as in Europe.

Sea Trout or as some people call it weakfish is coming in the warehouse overnight. This is fish isn’t part of the trout family rather its part of the drum family. When they are young they prey on shrimp and other crustaceans as they get older they switch over to fish the bigger the better.

Other items coming into the warehouse are local Whitebait and local Head on Mahi-Mahi.

Do not dwell in the past, do not dream of the future, concentrate the mind on the present moment.
