Good Morning Chefs and Buyers,
 
A new week is here.  We brought in a lot of great stuff to get it started off right.  Head on Local Mahi Mahi is on it's way here.  These fish from New Jersey are always excellent.  3 to 5 pound Blackfish from Massachusetts look wonderful this morning.  Jumbo Black Sea Bass is back up and running.  They are 3 to 6 pounds and come to us from Boston.
 
Amberjack from North Carolina are incredibly fresh.  They come in between 4 and 6 pounds.  Florida sent us gorgeous Red Snappers and Red Grouper today. 
 
16/20 Fresh Shrimp from Florida are flawless as always.  Beautiful Golden Tilefish is in.  They are anywhere from 8 to 12 pounds.  We brought in more of the sustainable Sturgeon from Florida.  This fish farm specializes in sustainability and species growth.  Sturgeon is one of the world's oldest fish and has been long prized for their caviar and delicious fillets.  This has led to overfishing and a depletion of stocks worldwide.  More than a decade ago, an independent nonprofit organization dedicated to marine research and conservation began exploring ways to remove fishing pressures from wild Sturgeon stocks by developing innovative aquaculture techniques to produce a superior product in an environmentally responsible fashion.  Today, this fish is available in the marketplace.
