Since Valentine’s Day is less than two weeks away… We would like to discuss some of our oyster selection to include with your menu plans. Besides, what could be more romantic than to have oysters to start your meal with?
We have a new oyster available. It is the Washburn Islands Oyster. Jacob Fricke is the farm manager for these oysters in Waquoit Bay, Massachusetts. These are about 2 – 2 ½ inches so their appearance is not intimidating to novices. These oysters have a briny flavor with a clean, crisp finish.
On the other side of the US we have Hammersley Inlet Oysters. Hammersley Inlet is located in southern Puget Sound just north of Totten Inlet. It’s a nutrient rich area that produces an oyster that grows very quickly and that tends to have plump, full, and sweet meat. Its flavor begins with a mild saltiness, followed by a nice cucumber finish. It’s another small oyster that is great to introduce to novices as well.
Our buyers are bringing in local caught Tuna, Swordfish, and Escolar (White Tuna) tomorrow morning. We also have some beautiful Mahi-Mahi and the Tilefish looks spectacular. Both species are colorful on the outside and flavorful on the inside because of its steady diet of squid, lobster, and other varieties of shellfish.
