Good Morning Chefs and Buyers!


Today our buyers have brought in some beautiful fish for the weekend. We have pristine looking Grouper in house….Grouper is great as a substitute for certain white fish such as Wild Stripe Bass and Halibut. There’s plenty of Mahi-Mahi, another great grilling fish. Fluke is also plentiful.





We also have wonderful Golden Tile. You can just see the freshness of this fish by looking at its gorgeous color. Tile is a delicious fish that has sweet, white flesh that comes from its diet of shellfish and squid. They sure don’t come prettier that that!!!





Elkhorn is oysters that come from the Willapa Bay in Oregon. They have speckled white and black shells which are tinged with green and bumpy with barnacles. Elkhorns are among the more rustic-looking oysters. They’re not prettified or citified. They are however, meaty and briny, with a mucky minerality to them. It’s the strongest flavored of the Willapa oysters. It’s impressive and worth a try!!!
