Good Morning Chefs and Buyers,
 
The best Wild King Salmon we've seen all year came in this morning.  These flawless head off and gutted fish are in from Washington state and average about 10 pounds.  We also brought in more Coho Salmon.  The quality was lousy when the season first opened, but appears to have turned a corner.  The fish are also head off and gutted and range from 4 to 6 pounds.  Wild Striped Bass remains a problem.  New York season has closed.  This means the only state open is Maryland.  We'll let you know if they start producing.  We still recommend leaving a substitute.
 
Beautiful 10 to 40 pound Halibut from waters off Nova Scotia are here again.  We've been seeing these fish almost everyday and are very happy with them.  A small amount of Blackfish is available.  We recommend ordering these 3 to 5 pound fish in advance.  Cobia is available this morning.  The fish are from North Carolina and weigh about 15 pounds each.  U/10 and 10/20 Scallops are super fresh and are a mix from New Jersey and Massachusetts.
 
Golden Tilefish from Florida look terrific at 8 to 10 pounds each.  Farm raised Siberian Sturgeon continue to look wonderful.  They average about 10 pounds per fish.  Mahi Mahi remains tight and will probably stay that way for a few days.  Please plan accordingly.
