6.19.12

Good Morning Chefs and Buyers,
 
We have 3 kinds of Wild Salmon available today.  They all come from Alaska and look terrific.  King Salmon and Ivory King Salmon are both weighing between 12 and 14 pounds each.  Sockeye Salmon are averaging about 6 pounds.  All of them are head off and gutted, so your yield will be excellent.  We also brought in more Farmed King Salmon and we got in some Farmed Scottish Sea Trout that are about 12 pounds each.  They look amazing.
 
Day boat Monkfish tails came in last night from New Jersey and look super bloody.  Wild Striped Bass is down in price a bit.  We have smaller fish that are between 5 and 8 pounds from Delaware.  We also have larger fish from Rhode Island that are 10 pounds and up.  We are back up and running with day boat Gloucester Cod that are 10 pounds and up.  Jumbo Black Sea Bass is available in limited amounts.  Soft-Shell Crabs appear to be having a good week; well good for us, bad for them, and should be available in all sizes.
 
Red Snappers finally seem to be back on track.  They are in from Florida and look great.  Gray Tilefish from North Carolina is still running strong.  These fish are around 6 pounds each.  3/4 Chilean Turbot is fresh this morning and is always a nice idea for a special.
