8.30.12

Good Morning Chefs and Buyers,

The weekend is fast approaching.  It's time to get those menus ready.  Please note that we are CLOSED MONDAY FOR LABOR DAY (9/3) and will reopen Tuesday (9/4).  Local Wahoo looks fantastic this morning.  We are lucky to be seeing these so many days in a row.  We still aren't finding any #2 Tuna.  The 2+ and #1 we've been getting look great though.  Local Swordfish should continue to be nice through the weekend.  5 pound Monkfish Tails are coming in from Long Island.  More U/10 and 10/20 Scallops from New Jersey are on their way here for the weekend.

The effects of Hurricane Isaac are really starting to take hold.  We are expecting to be extremely limited, or completely out of Grouper, Red Snapper, 16/20 Fresh Shrimp, Rock Shrimp and possibly Lump and Jumbo Lump Crabmeat.  Beautiful Escolar from Ecuador showed up this morning.  They are large fish, so we will cut you whatever size piece you need.  Mahi Mahi came in head off and gutted from Panama.  Each fish averages about 10 pounds.

Fresh Squid is tough to come by right now.  When the moon is big, they don't catch squid.  We have plenty of frozen to sub if necessary.  Sardines came in from Portugal and brought fresh Anchovies with them.  Local Whelks are available for the first time in a while too.

Day boat Halibut from waters off Nova Scotia, Canada came in again this morning.  These super fresh fish come in with the head already off and weigh anywhere from 10 to 40 pounds.  Wild Coho Salmon are still being caught at the mouth of the river in Alaska.  This means they haven't made it up upstream and aren't spawned out.  We are bringing in more Wild King Salmon from northern California and the price is expected to drop a bit.
