8.1.12

Good Morning Chefs and Buyers,
 
We are bringing in some great items from Florida tonight.  These never disappoint.  Red Grouper that weigh between 5 and 10 pounds are always super fresh.  Red Snappers from 2 pounds all the way up to 8 pounds are coming in too.  16/20 Fresh Gulf Shrimp will be back tomorrow and are always beautiful.  We have Sturgeon in house today.  These farm raised Siberian Sturgeon come out of Florida and look terrific.  Louisiana Lump and Jumbo Lump Crabmeat are delicious this morning.
 
Jumbo Black Sea Bass is available, but the price shot up on us.  We don't expect a break in price until next week.  We are still bringing in Wild Striped Bass daily.  10 to 40 pound Halibut from waters off Nova Scotia are gorgeous as usual.  Tomorrow is our weekly shot of Sardines from Portugal.  We have a little bit of Razor Clams available today.  We are hoping to track down some more tonight, but the weather isn't cooperating.
 
The nicest Grey Tilefish I've ever seen is here this morning.  These fish are incredibly fresh and weigh between 4 and 6 pounds.  They come to us from the Carolina's.  Local Tuna looks lovely today.  We are having some trouble finding large amounts of Swordfish right now.  We are set to receive a nice size shipment for the weekend.  Wild Salmon is everywhere right now.  Wild Kings look great from California.  They weigh about 10 pounds.  Wild Sockeye and Coho Salmon are available from Alaska.  The Sockeye's weigh around 5 pounds and the Coho's are smaller at around 3.
