Good Morning Chefs and Buyers,
 
It's time to finalize your weekend menu.  We want to let you know that Wild Striped Bass is going to be a problem this weekend.  We were cut short on our order today and don't have any confirmed deliveries tonight.  Since Massachusetts closed, New York simply isn't catching enough fish to keep up with demand.  Please leave a substitute and plan accordingly.  Gloucester Cod is back.  They are set to arrive tonight and are always great quality.  Local Escolar looks like a terrific option for a special.  We will cut you whatever size piece you need.  Locally caught Swordfish are incredibly fresh this morning.  U/10 and 10/20 Scallops from New Jersey are set to come in tonight as well.
 
Florida sent us our usual Thursday items.  Red Grouper look sharp and weigh between 5 and 10 pounds.  Red Snapper weighing in from 2 to 8 pounds are nice too.  16/20 Fresh Gulf Shrimp are perfect as always.  We also tracked down some head off and gutted Mahi Mahi from Guatemala.  They range in size from 5 to 15 pounds.
 
Wild King and Wild Sockeye Salmon are both coming out of Alaska.  Big Gray Tilefish are in from North Carolina.  The fish look fantastic.  We got a small amount of Blackfish from Massachusetts.  I would recommend pre-ordering them.  Oysters from both coasts should be in good shape this weekend.  We also got our weekly shot of Portuguese Sardines that are always great.
