8.13.12

Good Morning Chefs and Buyers,
 
It's a new week and we brought in some lovely local items this morning.  We got our hands on some Escolar.  This local fish looks beautiful.  It is huge.  We will cut you whatever size you need.  2 to 4 pound King Whiting is available this morning.  U/10 and 10/20 Scallops are super fresh out of Barnegat Bay, NJ.  Local Swordfish and Tuna arrived this morning.  We managed to track down some #2 Tuna for tomorrow.  The last of the Massachusetts Wild Striped Bass came in this morning and we are bringing in New York fish to make up the difference.  The quality looks sharp and the jump in price is less than we expected.
 
Live Red California Crayfish are on their way here.  We aren't bringing in that much, so please order them in advance.  Beautiful Panamanian Corvina came in this morning.  We also have 3/4 Chilean Turbot that is always excellent.  Mexican Red Grouper was a nice surprise today.  They look fantastic and range in size anywhere from 5 to 10 pounds each.
 
Siberian Sturgeon that is farm raised in Florida is here today.  They are always fantastic quality.  Whitebait came in this morning from the Great Lakes.  Icelandic day boat Cod are here and look amazing as usual.  The fish are head off and gutted and provide a nice break from the expensive fish coming out of New England.  California King Salmon is on it's way here for delivery tomorrow.
