8.30.12

Good Morning Chefs and Buyers,

The weekend is fast approaching.  It's time to get those menus ready.  Please note that we are CLOSED MONDAY FOR LABOR DAY (9/3) and will reopen Tuesday (9/4).  Local Wahoo looks fantastic this morning.  We are lucky to be seeing these so many days in a row.  We still aren't finding any #2 Tuna.  The 2+ and #1 we've been getting look great though.  Local Swordfish should continue to be nice through the weekend.  5 pound Monkfish Tails are coming in from Long Island.  More U/10 and 10/20 Scallops from New Jersey are on their way here for the weekend.

The effects of Hurricane Isaac are really starting to take hold.  We are expecting to be extremely limited, or completely out of Grouper, Red Snapper, 16/20 Fresh Shrimp, Rock Shrimp and possibly Lump and Jumbo Lump Crabmeat.  Beautiful Escolar from Ecuador showed up this morning.  They are large fish, so we will cut you whatever size piece you need.  Mahi Mahi came in head off and gutted from Panama.  Each fish averages about 10 pounds.

Fresh Squid is tough to come by right now.  When the moon is big, they don't catch squid.  We have plenty of frozen to sub if necessary.  Sardines came in from Portugal and brought fresh Anchovies with them.  Local Whelks are available for the first time in a while too.

Day boat Halibut from waters off Nova Scotia, Canada came in again this morning.  These super fresh fish come in with the head already off and weigh anywhere from 10 to 40 pounds.  Wild Coho Salmon are still being caught at the mouth of the river in Alaska.  This means they haven't made it up upstream and aren't spawned out.  We are bringing in more Wild King Salmon from northern California and the price is expected to drop a bit.

8.29.12

Good Morning Chefs and Buyers,

We will be closed this Monday for Labor Day (9/3).  Please plan accordingly.  We still aren't seeing any #2 Tuna.  We do have Local 2+ and #1 available as well as more Local Swordfish.  Wild Striped Bass catches during New York's season have been disappointing.  Fish are available, but we aren't seeing nearly the numbers Massachusetts was producing.  Local John Dory has been available everyday this week and we expect to see more of these 3 pound beauties as the week goes on.

Gloucester Cod look gorgeous this morning.  They range from 10 to 15 pounds and come in head off and already gutted.  U/10 and 10/20 Scallops are coming in tonight from Barnegat Bay, New Jersey.  These are always wonderful.  Jumbo Black Sea Bass remains consistent in both quality and availability.  The fish average about 3 to 4 pounds and come out of Boston.  East Coast Canadian Halibut are coming in daily and are 10 to 40 pounds.

Due to Hurricane Isaac, we are expecting most of our southern items to be tough to come by for a few days.  This will effect Grouper, Red Snapper, Rock Shrimp and 16/20 Fresh Shrimp.  Hopefully this is only temporary.  We will keep you updated as to their availability in the future.  Farm Raised Siberian Sturgeon is available this morning.  They are always great.  Our weekly shot of Sardines from Portugal are on their way here for delivery tomorrow.  Wild King Salmon came in this morning and Coho Salmon will be in tomorrow.  Both come from Alaska.

8.28.12

Good Morning Chefs and Buyers,

Local Swordfish and Tuna arrived this morning.  The quality of both is great.  Unfortunately, nothing is grading out to #2.  Only #1 and 2+ Tuna are available.  Local Wahoo looks fantastic.  We have about 100 pounds available; so get it while you can.  Spanish Mackerel are nice and average about 3 pounds.  Local Dory is still coming in and are around 3 pounds as well.  U/10 and 10/20 Scallops are excellent.  They are coming out of New Jersey.

We are already starting to see the effects of this soon to be hurricane.  No one is fishing in the Gulf of Mexico.  This means that we will not see any 16/20 Fresh Shrimp, Red Snappers, or Rock Shrimp.  We are hoping to get some Grouper from the West Coast.  The last of the Louisiana Lump and Jumbo Lump Crabmeat is en route to us now.  After that, we are going to bring in Maryland Crabmeat.

Panama is sending us more head off and gutted Mahi Mahi.  These fish are always fantastic quality.  We are finally getting in 3/4 Chilean Turbot.  After a delay in shipping, these beauties will be here for delivery tomorrow.  Fire River Oysters are also set to arrive tonight from New Brunswick, Canada.

After a no show today, Wild King Salmon is on it's way here now.  Coho Salmon from Alaska is still running strong.  They are catching these fish at the mouth of the river so they don't have a chance to spawn up river yet.  Wild Pike came in from the Great Lakes.  They average about 4 pounds each.

8.27.12

Good Morning Chefs and Buyers,

It's a new week.  Some nice local items came our way this morning.  Local 3 to 5 pound Sea Trout are here and look great.  Local Dory is back.  The fish range in size from 3 to 5 pounds each.  Wild Striped Bass are coming from Long Island, but the price doesn't appear to be going down.  Tuna remains a problem.  We will have Local fish coming our way Wednesday night and hopefully this shipment will have all grades available.

The storm brewing off the coast is already starting to wreak havoc on the availability of southern items.  This means Snapper, Grouper, Fresh Shrimp, Tilefish and Crabmeat will likely be tough to come by for a few days.  Please plan accordingly and we will keep you updated regarding closures.  Ecuador sent us super fresh Escolar and Wahoo this morning.

Wild King Salmon is still looking great.  Coho is available, but we aren't seeing the same numbers we saw last week.  Gloucester Cod prices are coming back down to earth and the fish look really nice.  Black Sea Bass are still running between 3 and 5 pounds each.   Halibut prices are starting to creep up.  The reason for this is that more fish are coming from the West Coast.  More travel equals more money.  The quality of both the East and West Coast fish are flawless.

8.23.12

Good Morning Chefs and Buyers,

The weekend is fast approaching.  We want to keep you up to date regarding Wild Striped Bass and Tuna.  We brought in some really nice Wild Striped Bass from New York.  They are not cheap.  We aren't sure how much, or if we can get more.  We still recommend leaving a substitute.  Tuna is still a concern.  A few fish showed up this morning.  We are hoping to get more tonight, but it is still going to be very limited.  Please plan accordingly.  Gloucester Cod prices appear to be stabilizing a bit.  The fish look really nice too.  U/10 and 10/20 day boat Scallops are in from New Jersey and should show up again for the weekend.

Panama has some wonderful items available.  Head off and gutted 10 to 20 pound Mahi Mahi are a can't miss.  We also have Triple Tail that range from 3 to 5 pounds and farm raised 15 pound Cobia available for pre-orders only.

We will have no Cockles or Manila Clams available this weekend.  Rain has caused closures on Cockles in New Zealand and a heatwave has forced closures on Manila's.  Our weekly delivery of Portuguese Sardines looks wonderful as expected.  Beautiful 16/20 Fresh Gulf Shrimp arrived this morning and look great.  We also have super fresh Lump and Jumbo Lump Crabmeat from our friends in Louisiana.

Day boat Halibut from waters off Nova Scotia range from 10 to 40 pounds.  Golden Tilefish is in again from Florida and will make a great substitute should Wild Striped Bass be unavailable.  Gorgeous Coho Salmon came in from Alaska.  They are catching these fish right at the mouth of the river so they aren't spawning yet.

8.21.12

Good Morning Chefs and Buyers,

The best Wild King Salmon we've seen all year came in this morning.  These flawless head off and gutted fish are in from Washington state and average about 10 pounds.  We also brought in more Coho Salmon.  The quality was lousy when the season first opened, but appears to have turned a corner.  The fish are also head off and gutted and range from 4 to 6 pounds.  Wild Striped Bass remains a problem.  New York season has closed.  This means the only state open is Maryland.  We'll let you know if they start producing.  We still recommend leaving a substitute.

Beautiful 10 to 40 pound Halibut from waters off Nova Scotia are here again.  We've been seeing these fish almost everyday and are very happy with them.  A small amount of Blackfish is available.  We recommend ordering these 3 to 5 pound fish in advance.  Cobia is available this morning.  The fish are from North Carolina and weigh about 15 pounds each.  U/10 and 10/20 Scallops are super fresh and are a mix from New Jersey and Massachusetts.

Golden Tilefish from Florida look terrific at 8 to 10 pounds each.  Farm raised Siberian Sturgeon continue to look wonderful.  They average about 10 pounds per fish.  Mahi Mahi remains tight and will probably stay that way for a few days.  Please plan accordingly.

8.16.12

Good Morning Chefs and Buyers,

It's time to finalize your weekend menu.  We want to let you know that Wild Striped Bass is going to be a problem this weekend.  We were cut short on our order today and don't have any confirmed deliveries tonight.  Since Massachusetts closed, New York simply isn't catching enough fish to keep up with demand.  Please leave a substitute and plan accordingly.  Gloucester Cod is back.  They are set to arrive tonight and are always great quality.  Local Escolar looks like a terrific option for a special.  We will cut you whatever size piece you need.  Locally caught Swordfish are incredibly fresh this morning.  U/10 and 10/20 Scallops from New Jersey are set to come in tonight as well.

Florida sent us our usual Thursday items.  Red Grouper look sharp and weigh between 5 and 10 pounds.  Red Snapper weighing in from 2 to 8 pounds are nice too.  16/20 Fresh Gulf Shrimp are perfect as always.  We also tracked down some head off and gutted Mahi Mahi from Guatemala.  They range in size from 5 to 15 pounds.

Wild King and Wild Sockeye Salmon are both coming out of Alaska.  Big Gray Tilefish are in from North Carolina.  The fish look fantastic.  We got a small amount of Blackfish from Massachusetts.  I would recommend pre-ordering them.  Oysters from both coasts should be in good shape this weekend.  We also got our weekly shot of Portuguese Sardines that are always great.

8.15.12

Good Morning Chefs and Buyers,

We brought in some wonderful items this morning and have some great stuff coming our way for tomorrow.  Local Wahoo came in today.  The fish average about 20 pounds, but we will cut you whatever size piece you need.  Local Dory is still coming in fairly regularly.  These tend to be hit or miss regarding availability; so grab these 2 to 4 pounders while they last.  Wild Striped Bass is going to be hard to come by for a few days.  New York isn't pulling in as many fish as Massachusetts was and this is driving up the price.  Local 5 pound and up Monkfish Tails look fantastic this morning.

Gorgeous Icelandic Day Boat Cod is available.  These fish are flawless and weigh between 10 and 15 pounds and are already gutted with the head off.  Escolar from Ecuador looks great today.  It appears as though Red Snapper is going to be a problem moving forward.  We aren't seeing the same number of fish we normally do.  Wild King and Sockeye Salmon are both coming out of Alaska.  The King's average about 12 pounds and the Sockeye's are smaller at around 6.  East Coast Canadian Day Boat Halibut are flawless and range in size from 10 all the way up to 40 pounds.

Tomorrow is our weekly shot of Sardines from Portugal.  We have the opportunity to get some fresh Sepia and Rouget from Spain tonight.  These are order in advance items only, however.  Whelks came our way from Maine overnight and there should be more available for the rest of the week.

8.13.12

Good Morning Chefs and Buyers,

It's a new week and we brought in some lovely local items this morning.  We got our hands on some Escolar.  This local fish looks beautiful.  It is huge.  We will cut you whatever size you need.  2 to 4 pound King Whiting is available this morning.  U/10 and 10/20 Scallops are super fresh out of Barnegat Bay, NJ.  Local Swordfish and Tuna arrived this morning.  We managed to track down some #2 Tuna for tomorrow.  The last of the Massachusetts Wild Striped Bass came in this morning and we are bringing in New York fish to make up the difference.  The quality looks sharp and the jump in price is less than we expected.

Live Red California Crayfish are on their way here.  We aren't bringing in that much, so please order them in advance.  Beautiful Panamanian Corvina came in this morning.  We also have 3/4 Chilean Turbot that is always excellent.  Mexican Red Grouper was a nice surprise today.  They look fantastic and range in size anywhere from 5 to 10 pounds each.

Siberian Sturgeon that is farm raised in Florida is here today.  They are always fantastic quality.  Whitebait came in this morning from the Great Lakes.  Icelandic day boat Cod are here and look amazing as usual.  The fish are head off and gutted and provide a nice break from the expensive fish coming out of New England.  California King Salmon is on it's way here for delivery tomorrow.

8.9.12

Good Morning Chefs and Buyers,

The weekend is almost here.  It's time to get your menu ready.  Massachusetts Wild Striped Bass season is coming to a close.  They are quickly running out of tags.  When it is all said and done, we will be bringing in fish from New York.  The quality should remain the same, but the price is going to go up.  Local Swordfish looks lovely this morning.  Local Tuna looks great too.  Unfortunately, very few fish are grading out to #2 grade.  We have plenty of #1 and 2+ available.  Large head on Cod from Massachusetts is all we're able to get for the weekend.  We have arranged a shipment of day boat Icelandic Cod for Monday morning.

Live Scallops in the Shell came in this morning from Maine.  Unfortunately, we are having trouble tracking down U/10 and 10/20 Scallops.  Please order them in advance if possible.  Farm raised King Salmon from New Zealand are a nice substitute for the Wild Salmon that was around this morning.  The quality wasn't up to our standards, so we didn't pick any up.  If the quality remains poor, we won't have any for the weekend.

Both east and west coast Oysters should be fine this weekend.  The only concern is Bluepoint's.  Sardines came in today as expected.  These beauties come to us from Portugal and tend to fly out of here.  Maryland and Louisiana sent us super fresh Lump and Jumbo Lump Crabmeat this morning.  Florida came through with stunning Red Grouper that weigh 5 to 10 pounds each.  Red Snapper is available from 2 to 8 pounds.  16/20 Fresh Gulf Shrimp are flawless as always.

8.7.12

Good Morning Chefs and Buyers,

We'll start with the bad news.  Sockeye Salmon season in Alaska is closed.  The good news is Coho Salmon season in Alaska is open.  The fish look great and weigh 7 to 9 pounds with the head off and already gutted.  We got our hands on some 20 to 40 pound Halibut from Alaska.  We also have Halibut from Nova Scotia.  Both are super fresh this morning.

Massachusetts is closing Wild Striped Bass season on Wednesday.  New York will still be open, but expect prices to be unstable.  3 to 5 pound Blackfish are in from Massachusetts and look terrific.  Local Bluefish came around this morning.  We should see more of them over the next few days, too.

We got in our shipment of 2 to 8 pound Red Snappers from Florida and they look great.  3/4 Turbot came in from Chile and are always nice.  We still can't get our hands on any Uni.  Weather closures have made it impossible until at least Thursday.

We are tight on #2 Tuna.  They are nice local fish; we just don't have a lot of them.  If you need #2 Tuna, please order it in advance.  We have plenty of 2+ and 1.  Cape May sent us great U/10 and 10/20 Scallops.  Local Monkfish Tails are nice and big at 5 to 10 pounds each.  We brought in more Local John Dory because what we had yesterday flew out the door.

8.2.12

Good Morning Chefs and Buyers,

It's time to get your weekend menu lined up.  We brought in a lot of great items to help you plan it out.  Wild Striped Bass prices continue to fall.  The fish look super fresh and are coming from Massachusetts.  U/10 and 10/20 Scallops are flawless and are a mix from Boston and Barnegat Bay, New Jersey.  It looks like Swordfish is going to be a little tight this weekend.  I'd recommend ordering in advance just to be safe.  Local Tuna looks wonderful this morning.

We brought in more of that gorgeous Grey Tilefish from North Carolina.  These fish average about 5 pounds each.  Day boat Halibut from waters off Nova Scotia, Canada continue to impress.  They range in size from 10 to 40 pounds and quality is unmatched.  Wild Sockeye Salmon and Wild King Salmon are still coming in daily.  The Sockeye Salmon are about 5 pounds and come from Alaska.  The King Salmon are closer to 10 pounds and come from California.

Our weekly shipment of Sardines from Portugal arrived as scheduled and look great.  More Mahi Mahi from Guatemala is set to arrive tonight.  These fish will be head off and gutted and we are always happy with them.  Florida sent us the usual suspects this morning.  Red Snapper ranging in size from 2 to 8 pounds look nice.  Red Grouper are 5 to 10 pounds.  16/20 Fresh Gulf Shrimp are perfect as usual.

Good Morning Chefs and Buyers,

We are bringing in some great items from Florida tonight.  These never disappoint.  Red Grouper that weigh between 5 and 10 pounds are always super fresh.  Red Snappers from 2 pounds all the way up to 8 pounds are coming in too.  16/20 Fresh Gulf Shrimp will be back tomorrow and are always beautiful.  We have Sturgeon in house today.  These farm raised Siberian Sturgeon come out of Florida and look terrific.  Louisiana Lump and Jumbo Lump Crabmeat are delicious this morning.

Jumbo Black Sea Bass is available, but the price shot up on us.  We don't expect a break in price until next week.  We are still bringing in Wild Striped Bass daily.  10 to 40 pound Halibut from waters off Nova Scotia are gorgeous as usual.  Tomorrow is our weekly shot of Sardines from Portugal.  We have a little bit of Razor Clams available today.  We are hoping to track down some more tonight, but the weather isn't cooperating.

The nicest Grey Tilefish I've ever seen is here this morning.  These fish are incredibly fresh and weigh between 4 and 6 pounds.  They come to us from the Carolina's.  Local Tuna looks lovely today.  We are having some trouble finding large amounts of Swordfish right now.  We are set to receive a nice size shipment for the weekend.  Wild Salmon is everywhere right now.  Wild Kings look great from California.  They weigh about 10 pounds.  Wild Sockeye and Coho Salmon are available from Alaska.  The Sockeye's weigh around 5 pounds and the Coho's are smaller at around 3.
