Wild Edibles Newsletter 11-5-2013

Good Morning Chefs and Buyers,

We have a fresh batch of the popular skate cheeks coming in tonight and ready for delivery tomorrow morning, a good majority of Chefs' we work with have demanded this product day in and day out, and we should be able to please everyone this week.  Skate is a very unique and popular fish with white sweet tasting flesh and has a cartilage frame rather than bones. Skate Cheeks are a really great tasting rare treat.

People just can't get enough of these Nantucket Bay Scallops, taking the prize for the best selling item for the past 3 weeks.  The neat is actually the abductor mussel with creamy to pink flesh and elastic to the touch. Flavor is mild and sweet with the texture being firm and moist.

Everyone must take advantage that we have Coho Salmon in the house today, the season will be over soon and it will difficult for everyone across the board to get any. Great looking fish with firm high fat content, the taste is pleasingly full of salmon flavor but slightly milder that that of sockeye. Take advantage NOW!

Sepia also known as cuttlefish a cross between squid and octopus in appearance. The thick meat cooks up snow white and is tender with a subtle flavor.  The tentacles are shorter that the body where the thick slices form from.
