Good Morning Chefs and Buyers,

Fresh Mahi from Guatemala with with a lean flesh and a mild sweet flavor profile.  It had a moderately firm texture and large moist flakes.  Mahi is one of those fish that is wonderful just about anyway you can think to prepare it - from the simple to the complex, minimal ingredients to multiple ingredients, subtle to strong flavors.



Wild Striped Bass fresh in this morning from Long Island, the great looking dark striped skin crisps up beautifully when cooked and tastes great.  The flesh cooks up white and moist and has a firm texture.  Please Note: We are currently limited on this fish so please get your orders in as soon as possible.






Great Sturgeon in from Florida, it has a mild delicate flavor and the Sturgeon has a very meaty firm flesh.  It is the "Steak" of the seafood due to its firmness when cooked.








Martha's Vineyard, MA Katama Bay Oysters are grown in the pristine waters of Martha's Vineyard, MA in a unique spot miles from the developed coastline of the mainland. Katamas have a salty start and a sweet finish.
