Wild Edibles Newsletter 8-8-2013

Good Morning Chefs and Buyers,

In the warehouse today we have fresh sardines from Portugal. The term sardine was first used during the early 15th Century and may have come from the Mediterranean island of Sardinia. Fresh sardines are often grilled, pickled, or smoked or they can be preserved in cans. They also are rich in vitamins and mineral as well.

Beautiful Sockeye Salmon, richly textured and highly flavorful, Sockeyes are the Second fattiest and they have the added benefit of having the firmest texture of all Pacific Salmon.

Massachusetts Black Sea Bass. Our Wonderful Jumbo Black Sea Bass, these fish weigh between 2-4 lbs each. This fish has a mild, fresh, somewhat delicate flavor and a tender but firm texture.

This may be the finest Louisiana delicacy there is! Soft Shell Crawfish! Crawfish shed their shells in order to grow. After they molt, their shells are soft and tissue thin. They are so delicate and sensitive, fried or sautéed the entire crunchy critter can be relished like a soft-shell crab.

“In order to succeed, your desire for success should be greater than your fear of failure.”
