Good Morning Chef’s and Buyers,


In the warehouse today is locally caught John
Dory. The luck every fisherman gets when
catching this fish is uncanny to any other. Many
say this fish taste like butter as it simply just
melts in your mouth.




Today We have Black Fish from Long Island.
Black fish also known by its Native American
name Tautog is found from Nova Scotia to
South Carolina. Famously known for its Mussel,
Clam crushing teeth. Black Fish have a
relatively firm white meat, which makes it ideal
for a variety of preparation methods including
fish stews and chowders.

Beautiful bright red Strawberry Grouper also in
house, the flesh of this grouper is very white
and delicate in flavor. It is easy to bone
completely and an ideal fish for the most
delicate of sauces, other than that it is an
awesome looking and tasting fish!



We also have Halibut Cheeks the size of my
Hand! These cuts come from the head behind
the eyes. They are sweeter than any other part
of the Halibut. Skinless and Boneless ready to
go for any Chef.
