Good Morning Chefs and Buyers,

The star of the day is undoubtedly our fantastic Jumbo Black Sea Bass. Locally caught off the Montauk coastline, these fish weigh between 2 and 4lbs each. The fish are so fresh that most are still in rigor even as I write this email. The blue sheen evident on the scales of each fish is a sure sign that these were in the water a matter of hours ago. We recommend you take advantage of these Black Sea Bass while you can.





Today we also have beautiful east coast Halibut from Nova Scotia. Halibut is distinguished by its flat shape and strange appearance due to the appearance of its eyes.







Local Wild Striped Bass is in the warehouse today and looking better than ever. What’s just as exciting as the quality is the price of wild striped bass right now with multiple states open. Striped bass are one of the species most sought-after by recreational anglers around the Bay. Hook-and-line is the primary gear used by recreational anglers, which has limited or no effect on habitat. Recreational landings for striped bass make up roughly 75-80% of the coastal landings.




Also in the warehouse today is locally caught John Dory. This fish gets its prey by stalking other fish. It usually eats cuttlefish, squid, sardines, and schooling fish. Its firm textured with white flesh and is moist and flaky with a low fat content.
