Wild Edibles Newsletter 7-2-2013

Good Morning Chefs and Buyers,

In House we have Beautiful Black Sea Bass, a small, plump fish related to grouper, is one of the most Important Commercial Bass Species. It has a mild, fresh, somewhat delicate flavor and a tender but firm texture.

We have Bonito in the house. Bonito can be found in the Atlantic and Pacific oceans. The meat has a firm texture and a darkish color. The bonito has a moderate fat content.

We will also have Golden Tilefish from the Carolina’s. Tilefish are usually found in sandy areas, especially around coral reefs. Generally shallow-water fish, tilefish are found at depths of 50-200 meters in both temperate and tropical waters. Tilefish is a mild tasting white fish that mostly feed on shrimp and crab and its sweet flavor is similar to crab or lobster.

If you are looking for a choice of Wild fish, look no further than our Wild King Salmon, which are the largest and top-of-the-line among all salmon species. King Salmon have a pronounced, buttery and rich flavor and can be enjoyed in a variety of ways.

“Fishing is much more than fish. It is the great occasion when we may return to the fine simplicity of our forefathers.” –Herbert Hoover
