Wild Edibles Newsletter 7-1-2013

Good Morning chefs and buyers,


Florida items are around to start the week off, with that being said in house we have beautiful 16/20 fresh Gulf shrimp. Last week they were tough to get but we secured a good amount.





Today we also have beautiful east coast Halibut from Nova Scotia. Halibut is distinguished by its flat shape and strange appearance due to the appearance of its eyes. On the right side when the Atlantic halibut changes from larva to fish its eyes are initially located on each side of its head. However during its first year of life, its body morphology undergoes a major change whereby its left eye migrates toward the right side of its head. It then swims with its blind side facing the sea bottom.


Another Florida item that was missing practically all of last week is in house today. Beautiful golden Tilefish from the Carolinas is available. These fish are usually found in sandy areas, especially around coral reefs. Generally shallow-water fish found at depths of 50-200 meters in both temperate and tropical waters. It is a mild tasting white fish that mostly feed on shrimp and crab which give it its sweet flavor.



Florida seems to be the popular region to start the week so far. Red Grouper, a member of the sea bass family is found in warm tropical temperatures worldwide. These fish are primarily accessible by hook and line.
