Wild Edibles Newsletter 7-11-2013

Good Morning Chefs and Buyers,

We have Golden Tilefish from the Carolina’s. Tilefish are usually found in sandy areas, especially around coral reefs. Generally shallow-water fish, tilefish are found at depths of 50-200 meters in both temperate and tropical waters. Tilefish is a mild tasting white fish that mostly feed on shrimp and crab and its sweet flavor is similar to crab or lobster.

Locally caught off the Montauk Coastline, Our Wonderful Jumbo Black Sea Bass, these fish weigh between 2-4lbs each. This fish has a mild, fresh, somewhat delicate flavor and a tender but firm texture.

Beautiful Sockeye Salmon, richly textured and highly flavorful, Sockeyes are the Second fattiest and they have the added benefit of having the firmest texture of all Pacific Salmon.

Wonderful Blackfish! These are considered by many to be the finest eating fare you can catch, If you’ve never had you must give it a try. The taste is light and pleasantly mild because the species feeds primarily on crustaceans and mollusks.
