Wild Edibles Seafood Update

Good Morning Chefs and Buyers,
 
Back by popular demands is the Ocean Trout or Weakfish, this fish is a real Atlantic treasure.  The state fish of Delaware, the Weakfish is a icon for well managed catch. Weakfish face more issues in its natural environment then the fear of overfishing.  The fish brought to us are regulated extremely well and gives a great option for those looking to go local.  The size of the fish range from 4-7 lbs on average.  Also in from the south are small Gray Tile Fish, 3-7lbs this is a good affordable option for a sweet white fleshed fish.  Swordfish price is taking a jump, fish have been hard to find, with boats returning home with bleak catches. 
 
One another note, we are judging interest in a new sustainable product out of South America, the Paiche is a tropical freshwater species native to the Amazon River Basin.  Paiche are raised in freshwater earthen ponds in Northeast Peru. This way, surrounding wild rivers and lagoons can remain protected while Paiche can still grow in their natural habitat.  Paiche is a firm white meat with a subtle, elegant flavor and texture. Combine all the best elements of Chilean sea bass, black cod, john dory and Atlantic cod, and you will have Rainforest Paiche.  Check out the picture attached and let us know if you have any interest in this fish.
