Wild Edibles Newsletter 9-4-2013

Good Morning Chef’s and Buyers,

Amazing Wild Artic Char back in action!
Substantially surpassing the farmed artic char in
size, the taste alone of these fish and its
uniqueness justify the temptation for all chefs
across the nation to give these fish a shot at
their menus.

Red Grouper is in the Warehouse from Florida.
Grouper is a member of the Sea Bass family and
are found in warm tropical temperatures
worldwide. Due to their preferred habitat
around coral, Groupers are primarily accessible
by hook and line

Amazing Rock Crab in house today! Not much to
go around so you need to grab up as much as
you can. These crab are pretty meaty in both
the claws and legs and has a sweeter buttery
taste compared to the similar Dungeness crab.

Glistening Boston Mackerel also available, the
firm dark flesh of this fish is fatty and rich with a
strong, sweet flavor. The high fat content of
the meat is filled with “good” fat, rich in
Omega-3 oils.
