Good Morning Chefs and Buyers,
 
It's a new week.  Hopefully you had a nice busy weekend and need to restock your walk-in.  Local John Dory is making it's first appearance in a while.  They are beautiful fish at 3 to 5 pounds each.  Gloucester Cod seems to be coming in regularly enough for us to stick with them over the Icelandic Cod we've been using of late.  Jumbo Black Sea Bass continues to look nice at 3 to 5 pounds.  We weren't able to track down any U/10 Scallops today, but the 10/20's out of New Jersey look wonderful.
 
Our buyer saw more Soft-shell Crabs this morning.  They are very expensive right now, but the price should drop in the weeks to come.  Tuna is an issue today.  #2 and 2+ are really hard to come by.  We have plenty of #1.  Lump and Jumbo Lump Crabmeat are going to be a problem until Wednesday.
 
Escolar from Ecuador is incredibly fresh this morning.  Florida sent us more Sturgeon today.  They are about 10 pounds each.  Gorgeous American Red Snapper, also from Florida, showed up this morning too.
 
Razor Clams from Maine couldn't be fresher today.  Our Golden Tilefish normally comes in from Florida.  We brought some in from Virginia this morning and are very happy with the quality.  They are 7 pounds and up.  Head off farmed Halibut is coming in tonight.  They will be available in 2 sizes, 10/20 and 20/40.  We will certainly be able to find the weight you are looking for.
