2.16.12

Good Morning Chefs and Buyers,

It's time to get your walk-ins stocked for the weekend.  Please keep in mind that this is a long weekend.  President's Day is Monday and there is no market.  We advise you to stock up on what you'll need early.  Wild Striped Bass continues to come in daily from Virginia and Maryland.  We have them from 5 to 8 pounds all the way into the 20's.  Local Swordfish looks like a great choice for the weekend.  Mahi Mahi that was caught somewhere between North Carolina and New Jersey are super fresh.  Local Monkfish Tails were cut this morning and look great.  Believe it or not, our buyer saw Soft-shell Crabs this morning.  This is just one of the benefits of not having a winter this year.

Dayboat 10/20 Scallops from New Jersey look delicious today.  We should continue to see great 10/20's through the weekend.  Sweet Maine Shrimp arrived this morning and we are hoping to get more tonight.  We are bringing in more of that gorgeous Dayboat East Coast Canadian Halibut.  The fish are coming to us from a boat that makes 2 day trips.  One day heading out to the grounds and one day back.  They can't get any fresher than that!

King Mackerel from Florida looks nice today.  They are about 7 to 9 pounds.  More 16/20 Fresh Gulf Shrimp showed up this morning.  They are terrific as always.  5 to 10 pound Red Grouper is here.  Golden Tilefish, also from Florida looks great today at 8 to 12 pounds.  Louisiana sent us more Lump and Jumbo Lump Crabmeat this morning as well.
