2.14.12

Good Morning Chefs and Buyers,

Valentine's Day is here.  Hopefully everyone makes it through in one piece.  We are ready to get you back to your normal menus tomorrow.  Local 2 pound Octopus from Long Island is here today.  The 10/20 Scallops coming out of New Jersey are wonderful right now.  Wild Striped Bass from Virginia and Maryland keeps pouring in here.  They are 5 to 8 pounds and 10+.  Please specify which size you would prefer.  Head on Local Mahi are flawless today.  We also have Swordfish and Tuna that are caught somewhere between North Carolina and New Jersey.  Local Albacore Tuna is available today at the great price of $4.25/lb.

We are trying out a new supplier for Dungeness Crabs from California.  The price is down a bit too.  If it isn't too windy, we should see some Sweet Maine Shrimp tomorrow.  Nantucket Bay Scallops most likely won't be available until Thursday because of the cold weather up north.  We flew through our delivery of West Coast Oysters and are a little light on them until Friday.

Louisiana is sending us Lump and Jumbo Lump Crabmeat tonight.  King Mackerel from Florida looks terrific this morning.  Redfish from Texas came in again this morning and couldn't be fresher at 4 to 6 pounds each.  They are very similar to a Red Drum.

Dayboat East Coast Canadian Halibut are super fresh.  They are anywhere from 10 to 50 pounds.  Panamanian Corvina looks like a great option today.  They are between 5 and 7 pounds.  3 to 4 pound Chilean Turbot is always a nice change of pace for a special as well.

If true love is blind, why is lingerie so popular?  Happy Valentine's Day.
