Wild Edibles Newsletter 3-20-2014

Good Morning Chefs and Buyers:

We have  razor clams in from Maine. Razor clams also known as the Atlantic JackKnife clam because of its shape can be on the North American Atlantic Coast from Canada to South Carolina as well as Europe.

We also have Gloucester Cod in today. This species lives in cold waters and deep regions of the North Atlantic. Cod is a mild tasting fish with dense flaky meat. A great choice for any meal.

Coming in from Florida Sturgeon are bottom feeders, shortnose sturgeon eat a variety of organisms. Using their barbels to locate food and their extendable mouths to then vacuum it up, they eat sludge worms, aquatic insect larvae, plants, snails, shrimp, and crayfish.

Fresh Halibut available, as we all know this is a lean fish with a mild sweet tasting white flesh, with large flakes and a firm but tender texture.  This is a favorite among fish lovers because of its great taste and high nutritional value.
