Good Morning Chefs and Buyers:

Wild Striped Bass

We have beautiful fish coming in from Virginia. Wild striped bass has a very clean and mild flavor with meat that has a firm texture.

Icelandic Cod

Icelandic Cod is a deep-water fish, living at 1,300 feet or more on both sides of the Atlantic. Cod is one of several ground fish species, meaning that they live on the seafloor.

Red Grouper

Groupers belong to one of the largest and most widely distributed families of fish, the sea basses. Red grouper (Epinephelus morio) is the most frequently seen grouper in the marketplace and is valued for its availability, flavor and size.

Sturgeon

Coming in from Florida Sturgeon are bottom feeders, shortnose sturgeon eat a variety of organisms. Using their barbels to locate food and their extendable mouths to then vacuum it up, they eat sludge worms, aquatic insect larvae, plants, snails, shrimp, and crayfish.
