Good Morning Chefs and Buyers,





Today we have Fresh Frog legs from Florida. Frog legs are high in protein and low in fat. It has the consistency of a whitefish but taste like delicate chicken. It is perfect for frying or throwing on the grill.





We also have imported sepia from Portugal. Sepia Also known as cuttlefish is actually not a fish but a mollask. It is also called the sea chameleon because of its ability to rapidly change color. It is found in the areas of the English Channel, the west coast of Africa and in the Mediterranean sea.



We also have blackfish from Long Island. Blackfish also known by its native American name Tautog is found from Nova Scotia to South Carolina. They prefer structured habitats and are frequently found near piers. Blackfish has a relatively firm white meat, which makes it ideal for a variety of preparation methods including fish stews and chowders


Red Grouper is also in the house from Florida. Red Grouper is a member of the sea bass family and are found in tropical and warm temperate waters worldwide. Due to their preferred habit around coral, groupers are primarily accessible by hook and line. Seasoned chefs agree that grouper is one of the best ”real Florida” seafood culinary choices.



Wild Stripe Bass season has opened up in Virigina and we are starting to see some big fish.Last but not least we have soft shell crabs in from the Carolina’s. we are now starting to see all sizes and the season seems to be in full swing.
