5.23.12

Good Morning Chefs and Buyers,

It isn't raining!  This is sure to fill up those seats tonight.  It also means we should see lots of fish coming in over the next few days.  We have some wonderful items available this morning.  Icelandic Dayboat Cod look terrific at 10 to 12 pounds each.  We are actually starting to see some Wild Striped Bass.  The fish are coming to us from recently opened Rhode Island.  Grey Tilefish from Virginia look great.  And this is good because Golden Tilefish is currently not around.  Dayboat East Coast Canadian Halibut are great as always and weigh 10 to 40 pounds.

New Zealand Pink Snappers are set to arrive tonight.  They usually weigh in at around 2 to 4 pounds.  Tomorrow is our weekly shot of Sardines from Portugal.  They tend to fly out of here, so order them early.  3/4 Turbot from Chile look great today.  Wahoo is in from South America.  The fish is big; we will cut you whatever size you need.

Siberian Sturgeon that is farm raised in Florida are flawless as always.  Red Grouper also came in from Florida.  They weigh between 5 and 10 pounds each.  Red Snappers have bright red gills to match this morning.  16/20 Fresh Gulf Shrimp are amazing as usual.

Wild Salmon is starting to trickle in from Alaska.  Wild King and Sockeye are both available.  They are coming from the Columbia River and are the same price.  They do however vary in size.  The King Salmon are around 14 pounds each and the Sockeye are averaging about 7 pounds.
