Good Morning Chefs and Buyers,

 

Well, another week is upon us.  You know what that means…Amazing seafood at great prices from your friends at Wild Edibles.  We have fantastic items for you today.  Huge Wreckfish from South Carolina are here.  They are coming in around 20 pounds each.  If you don't need that much, we will happily cut whatever size you need.  Wreckfish are found mainly on the Atlantic coast near caves and shipwrecks.  This is how it draws the name, Wreckfish.  They have prominent spiny fins and stay in schools of at least 5 fish.  Local Tuna from our friends in Jersey are coming in tonight.  We also have beautiful Dayboat U/10 Scallops from Barnegat Bay, N.J.

 

Wild Sockeye Salmon from the Copper River in Alaska is available.  These fish are consistently excellent.  They store up extra Omega 3 Fatty Acids for their 300 miles trek to spawn.  This makes them some of the most sought after salmon in the world.  We are unsure whether or not Prime and Hotel Soft-Shell Crabs will be available tomorrow.  We do however have Jumbo and Whales.

 

Amazingly fresh Onaga Queen Snapper came in today.  They are big at an average of 7 to 9 pounds and come from Florida.  The bright red gills and crystal clear eyes make these Onaga some of the freshest I've ever seen.  Sticking with our friends from Florida; we have nice, larger Golden Tilefish and Farm Raised Sturgeon available as well.  They are both averaging about 8 pounds per fish. 

 

We have Chilean Turbot coming in overnight for delivery tomorrow.  I've been told to expect the same great quality fish we are used to.  Great looking Black Grouper from Panama showed up this morning.  They are coming in between 5 and 10 pounds.  Nice, big Wahoo from Ecuador came in early this morning.  They are super fresh.  For those of you unfamiliar with Wahoo, here is some information.  They have an elongated body with scarcely visible scales.  They are iridescent blue in color with silver sides and vertical blue stripes.  They have a large mouth similar to a Mackerel and are some of the fastest fish in the world reaching speeds upwards of 50 mph.

Today is the 67th anniversary of D-Day.  On June 6, 1944 one of the largest amphibious assaults in human history took place as the Allied Forces crossed the English Channel to liberate mainland Europe from Nazi control.
