Good Morning Chefs and Buyers,

 

Another weekend is closing in on us.  Be sure to stock up on plenty of delicious seafood.  We have a fantastic new item available for you to enjoy.  Head-On Royal Red Shrimp.  They are available in U/10, U/12 and U/15 sizes.  They are frozen immediately on the ship because they are caught 40 to 60 miles offshore.  They come in 2 pound packages.  Unlike most shrimp, Royal Red Shrimp prefer deep waters.  They are generally found between 800 and 1500 feet, but have been known to go as deep as 2400 feet.  They never see sunlight and are found in 45-55 degree water.  They love the sandy mud and silt of the gulf floor.  They have a brilliant crimson red color.  We can thank Frank Patti for these gems.  He was the first to commercially catch these off the coast of Pensacola in 1966.  Only about 250 fishermen are licensed to catch Royal Red Shrimp.  Don't hesitate to call us regarding any questions you have about this exciting new item.

 

The south isn't done yet.  More gorgeous Strawberry Grouper from Florida came in today.  They are averaging 7 to 9 pounds each.  We also have more super fresh Blackfish.  These delicious fish are making their reverse Sherman's March from Georgia and are now in South Carolina.  By the end of the summer they will work their way all the way to Nova Scotia.

 

New England seems unshaken by the capture of FBI Most Wanted fugitive Whitey Bulger.  They sent us some amazing fish today.  Rhode Island Wild Striped Bass keeps arriving daily and looking flawless.  Gorgeous Gloucester Cod came in along with Large and Jumbo Fluke from Boston

 

We are still getting our hands on Local Mako Shark.  The cuts of Mako that I've seen are nice and firm and super bloody.  Black Seabass from Jersey showed up this morning.  They have bright red gills and are shockingly fresh.  Unfortunately, Soft-Shell Crabs are not available today and we aren't sure whether or not they will come our way for the weekend.

 

East Coast Halibut from our friends in the Great White North arrived overnight.  Halibut may be a little tough to come by this weekend.  The price of Wild King Salmon continues to drop.  As we all know, the Wild King Salmon season is always over before you know it.  Don't miss out on these fantastic fish.
