Good Morning Chefs and Buyers,

 

A new week is upon us.  Let's get the week started off right with some fantastic seafood.  We have some amazing Local items for your customers to enjoy today.  Mahi Mahi and Wahoo arrived this morning.  The Mahi Mahi are nice and large with the head on.  The Wahoo is huge at almost 70 pounds.  We are happy to cut this big guy up to whatever size you need.  Beautiful Yellowfin Tuna and Swordfish came in last night from the same local boat in the Carolinas.

 

Wild Striped Bass from Rhode Island is still coming in daily and look excellent.  Super fresh East Coast Halibut is in.  The fish are averaging around 30 pounds each.  Cod from our friends in Massachusetts is here.  The quality is excellent as usual.  Troll caught Wild King Salmon from Alaska keeps finding its way to Queens and is amazingly fresh.  Jumbo Soft-Shell Crabs are still the way to go.  Hotels and Prime Soft-Shells have had limited availability of late.

 

We got in some very fresh Tasmanian Sea Trout.  These organically farmed raised fish are high in Omega 3 Fatty Acids.  We also got in some Kingklip.  These 3 to 7 pound beauties are found in the Atlantic at depths up to 1500 feet.  They have a sweet, mild flavor with a firm texture resembling a Monkfish.  However, once cooked the flesh has large flakes to it.  They are a terrifying looking creature. Luckily they came in with the head already off so I don't get nightmares.  They are excellent smoked, poached, baked, steamed or grilled.
