7.9.12

Good Morning Chefs and Buyers,
 
A new week is here and the blistering heat seems to finally be lifting.  Hopefully, people come out of hiding and start eating.  Local Swordfish, Tuna, and Mahi Mahi all came in this morning from boats that fish waters from North Carolina to New Jersey.  They only send us the freshest fish.  The Mahi Mahi are between 7 and 20 pounds.  New jersey also sent us incredibly fresh U/10 and 10/20 Scallops this morning.
 
We got our hands on some Blackfish this morning from Massachusetts.  We haven't seen any in a while, so this is a nice surprise.  They are between 3 and 5 pounds.  Weakfish (Sea Trout) found it's way here from the Carolina's.  They are ranging from 4 to 6 pounds.  Day boat Halibut from eastern Canada look great at 10 to 50 pounds each.  Wild Sockeye and King Salmon are coming our way tonight.  The Sockeye are from Alaska and the King Salmon are from California.
 
Florida sent us some great items this morning.  Red Snappers look great.  As does Grouper and Sturgeon.  The Grouper are between 5 and 10 pounds while the Sturgeon are over 10 pounds.  Fresh 16/20 Gulf Shrimp are gorgeous as always.  Louisiana sent us super fresh Lump and Jumbo Lump Crabmeat.
 
3/4 Chilean Turbot is set to arrive overnight and is always lovely.  It looks like All-Leg Crabmeat and Uni are going to be a problem for a few days.  We should see All-Leg on Wednesday and Uni on Thursday.
