Good Morning Chefs and Buyers,

 

It's Restaurant Week!!! For those of you participating, I'm sure you are eager to show off your best culinary skills to hungry patrons that may not ever get the chance to dine in your excellent restaurants.  We are very excited to be able to offer you all the seafood specials you will need to make this Restaurant Week a successful one.  Gorgeous Dayboat Swordfish from the Carolinas arrived last night.  We also have fantastic Dayboat U/10 and 10/20 Scallops from our friends in Barnegat Bay, N.J.  Unfortunately, Wild Striped Bass may be an issue until Massachusetts opens up its season on Wednesday.

 

Maine has some great treats for us today that are perfect for a special.  Whelks and Steamer Clams are here and are some of the freshest I've ever seen.  We also have nice, big, green Mussels fresh from New Zealand.

 

Wild King and Sockeye Salmon keep coming in from Alaska.  They are both Head-Off and Gutted.  The Sockeye are about 5 pounds and the Wild King Salmon are huge.  I saw a 20 pounder this morning.  Steelhead Trout for $3.95!!!  I'm going to repeat that... Steelhead Trout for $3.95!!!  These amazing 4 to 10 pounders are coming to us directly from the Quinalt Native American Tribe in Washington State.  These highly sustainable fish are super fresh and look amazing.

 

We Have King Mackerel from Florida.  These giants are anywhere from 10 to 20 pounds each.  I know that may be too much for you, so we will happily cut whatever size you need.  We also have some Cobia in house today.  These farm raised Panamanian fish are coming to us with the head off and gutted.  This ensures a terrific yield on these delightful fish.

 

On this day in 1804 Alexander Hamilton and Aaron Burr had their infamous duel in Weehawken, N.J.  A Vice President shot a Secretary of the Treasury who died the next day.  This is like Joe Biden shooting Timothy Geithner.  I know it isn't a quote.  But I'll be damned if it isn't amazing.
