Good Morning Chefs and Buyers,

 

After limited availability on a few items yesterday, we are jam packed with your favorites for today.  As promised we have some updates regarding the Red Tide outbreak off the coast of British Columbia.  As it stands now, our best case scenario for seeing any Kusshi or other B.C. Oysters is July 18th.  They need to come back with 3 consecutive negative tests in order to harvest.  In other Oyster news: Skookum Oysters will not be available until October.  They are in the process of spawning.  Because of the shortage of British Columbia Oysters, Kumomoto are in high demand, thus resulting in limited availability.  Please order them in advance.

 

We have some excellent Local items today.  Gigantic Mahi Mahi from North Carolina arrived this morning.  Jumbo Local Porgies and Local John Dory are sure to make a fantastic special on this sunny summer day.  Big Dayboat Monkfish Tails are here.  These hideous fish luckily came in with the head already off and are anywhere from 7 to 10 pounds.  

 

After shorting everyone today on Dorade (we're sorry), we are expecting to get some in overnight for delivery tomorrow.  We have gorgeous 5 to 10 pound Red Grouper from Panama today.  Tomorrow is Sardine Thursday here at Wild Edibles.  Portuguese Sardines will be arriving overnight.  Stock up on these treats.  We can never keep them around.

 

From the complete other side of the world, we got in some Tasmanian Sea Trout and New Zealand Mussels.  The Trout are incredibly fresh and are between 5 and 7 pounds each.  A lot of you have fallen in love with these delicious fish.  For those of you who haven't tried it yet, I strongly recommend giving them a try.  The Mussels are big with a green tint to them.  They are perfect for a special.

 

Wild Striped Bass is here.  We have 5 to 8 pound fish from Maryland and 10+ pound fish from Rhode Island.  Massachusetts opens next week which should give us a break on price.  New York's season is open, but no fish are reaching us.  They are holding onto their tags to play the market.  Alaska keeps coming through for us with gorgeous Salmon.  Wild King Salmon arrived overnight.  For the first time this season they are coming to us with the head already off.  This will produce better yields.  We also got in more Wild Sockeye Salmon.  These run smaller than the King Salmon but also come in gutted with the head off.
