Good Morning Chefs and Buyers,
 
A lot of really great items came our way this morning.  Barnegat Bay, New Jersey is back up and running with beautiful U/10 and 10/20 Scallops.  We are very well stocked on Local Swordfish that looks great.  We should be able to get more Black Sea Bass tonight which will be a good sub in case the Wild Striped Bass is a no show.  If you plan to order Wild Striped Bass, please leave a substitute.
 
Grey Tilefish from North Carolina continue to look amazing and weigh about 6 pounds each.  We are still running with Icelandic Dayboat Cod.  They are currently a better value and the quality is excellent.  We expect to start bringing in Cod from New England soon.  Wild King Salmon from Alaska is available.  We had 25 pound monsters in yesterday, but today we can get 10 to 15 pound fish with the head off and already gutted.  These will produce a terrific yield.
 
Tomorrow is our weekly shot of Sardines from Portugal.  They are always wonderful and tend to fly out the door.  I would order them ahead of time.  Bigeye #1 Tuna came in from Hawaii and looks fantastic.  Pacific Yellowtail (Hiramasa) are absolutely gorgeous this morning.  They weigh between 10 and 20 pounds and will make a terrific special.
 
Florida Red Grouper keep coming in between 5 and 10 pounds and will make a nice sub for Striped Bass.  Unfortunately, Red Snapper doesn't appear to be available for at least a few days.  We brought in more 16/20 Fresh Gulf Shrimp that are always perfect.
