Good Morning Chefs and Buyers,
 
We have a few issues going into the weekend that you should be aware of:
 
-There will be NO 600/800 Gram Branzini or Dorade.  We do have 400/600 gram.
-If you need Lobsters of any size, all orders must be placed before 11 am on Friday.
 
We are bringing in some great specials for the weekend.  Head on Wild Sable from northern California are on their way here.  They will be between 3 and 6 pounds.  These fish are highly sustainable and should be lovely.  Snook from New England is in house today and they look tremendous.  They average 4 to 6 pounds each.  Kona Kompachi is available for preorders only.  Wild Sockeye and Wild King Salmon both look great out of Alaska. 
 
There will be no Red Snapper available this weekend.  The effects of the tropical storm are sticking around.  We have some Mahi Mahi and Red Grouper, but the price is up and we have a very limited supply.  I recommend ordering them in advance.  16/20 Fresh Gulf Shrimp are gorgeous as always.  We also got our weekly delivery of Portuguese Sardines in this morning.
 
We found some Steak Cod.  The price went up on us, but we should see a break in price next week after the heat wave.  Beautiful Jumbo Fluke that is locally caught is here.  Wild Striped Bass season in Rhode Island is closing.  New York season opens soon.  Hopefully, there is no large gap in availability.

Good Morning Chefs and Buyers,
 
The bad weather around the country earlier in the week is still having an effect on available items.  We managed to get a lot of great stuff in this morning; but some items are still not around.  6 to 8 pound head on Snook from New England look like a great choice for a special.  Rhode Island sent us beautiful Wild Striped Bass today.  They are pulling in some pretty big fish.  We have them from 8 all the way up to 20 pounds.  Cod was a problem today, but we are hoping to get some nice Steak Cod tonight.  Black Sea Bass is going to be tight for a few days too.
 
It looks like this tropical storm in Florida is really taking it's toll.  We aren't seeing any Mahi Mahi, Red Snapper or Tilefish.  All they seem to be sending our way are 16/20 Fresh Gulf Shrimp.  Luckily, they are perfect as usual.
 
Local Tuna and Swordfish are on their way here.  They are caught between North Carolina and New Jersey and we only see the best and freshest fish from these boats.  U/10 and 10/20 Scallops are still coming in regularly from our friends down in Barnegat Bay, New Jersey.
 
Sardines are set to arrive as scheduled overnight from Portugal.  We have been very happy with the quality of late and are expecting more of the same.  Farm raised Scottish Sea Trout came in again.  They are super fresh and similar to an oversized Rainbow Trout.  They run between 10 and 12 pounds each.  The price of Halibut came down.  Please check your attached pricelist for the new lower price on these gorgeous 10 to 40 pound Canadian fish.

Good Morning Chefs and Buyers,
 
A new week is here.  Beautiful U/10 and 10/20 Scallops came in this morning from Barnegat Bay, New Jersey.  We are getting in another shipment of Local Swordfish and Tuna tonight.  These fish are caught between North Carolina and New Jersey.  We are always thrilled with the quality of them.  We have been getting our Mahi Mahi from the same boats lately; but none is available and we haven't been able to track any down.  This means we won't see any Mahi Mahi for a few days.  We'll let you know when some comes our way.  Bad weather is causing problems with Red Snapper and Steak Cod.  We are using large market cod currently.  Kona Kompachi will also be available from Hawaii for preorders only.
 
Wild King Salmon and Wild Sockeye Salmon are both coming in tonight from Alaska.  Good news, the price is going to go down a bit for both items.  The Wild King's usually average about 12 pounds and the Sockeye's come in closer to 6.  Farmed Sea Trout from Scotland are super fresh and weigh about 12 pounds each.
 
Snowy Grouper came in this morning from waters off North Carolina and Virginia.  If you are unfamiliar with them, they are kind of a mix in coloring between Black and Red Grouper.  They look fantastic and range in size from 5 to 10 pounds each.  16/20 Fresh Gulf Shrimp are gorgeous as always.  We found some Golden Tilefish from Florida that weigh about 5 pounds.  Big farm raised Siberian Sturgeon came in as scheduled from Florida.  They weigh between 15 and 20 pounds each.

Good Morning Chefs and Buyers,
 
We have 3 kinds of Wild Salmon available today.  They all come from Alaska and look terrific.  King Salmon and Ivory King Salmon are both weighing between 12 and 14 pounds each.  Sockeye Salmon are averaging about 6 pounds.  All of them are head off and gutted, so your yield will be excellent.  We also brought in more Farmed King Salmon and we got in some Farmed Scottish Sea Trout that are about 12 pounds each.  They look amazing.
 
Day boat Monkfish tails came in last night from New Jersey and look super bloody.  Wild Striped Bass is down in price a bit.  We have smaller fish that are between 5 and 8 pounds from Delaware.  We also have larger fish from Rhode Island that are 10 pounds and up.  We are back up and running with day boat Gloucester Cod that are 10 pounds and up.  Jumbo Black Sea Bass is available in limited amounts.  Soft-Shell Crabs appear to be having a good week; well good for us, bad for them, and should be available in all sizes.
 
Red Snappers finally seem to be back on track.  They are in from Florida and look great.  Gray Tilefish from North Carolina is still running strong.  These fish are around 6 pounds each.  3/4 Chilean Turbot is fresh this morning and is always a nice idea for a special.

Good Morning Chefs and Buyers,
 
Please be advised that Wild Striped Bass and Black Sea Bass aren't looking good for tomorrow.  We are bringing in extra Grouper and Tilefish as potential substitutes.  Please leave a substitute if you plan to order Striped or Black Bass.  The problem with the Wild Striped Bass is that Rhode Island is currently the only state open and the fish they are catching are too big to legally sell in New York.  New York State Wild Striped Bass season opens in a few weeks.  We are sure to see more fish at better prices then. 
 
Local Swordfish and Local Tuna both showed up this morning and look fantastic.  Soft-Shell Crabs should be available in all sizes tomorrow.  We try not to bring in extra crabs; so order what you will need this weekend for tomorrow.  Maryland and Louisiana both sent us very fresh Lump and Jumbo Lump Crabmeat.  Unfortunately, it looks like Mahi Mahi and Red Snapper are going to be a problem this weekend.  No one seems to be catching any fish.
 
3/4 Chilean Turbot looks like a nice choice for a weekend special.  Dorade and Branzini should be no problem this weekend.  We are bringing in another shipment tonight.  Dayboat 10 to 40 pound Halibut from eastern Canada looks fantastic this morning. 
 
Wild Hiramasa from the South Pacific is here.  The quality is perfect and the fish weigh between 10 and 20 pounds.  As I said earlier, we are bringing in extra Red Grouper from Florida and Grey Tilefish from North Carolina.  The Grouper are anywhere from 5 to 10 pounds and the Tilefish average about 6 pounds each.

Good Morning Chefs and Buyers,
 
A lot of really great items came our way this morning.  Barnegat Bay, New Jersey is back up and running with beautiful U/10 and 10/20 Scallops.  We are very well stocked on Local Swordfish that looks great.  We should be able to get more Black Sea Bass tonight which will be a good sub in case the Wild Striped Bass is a no show.  If you plan to order Wild Striped Bass, please leave a substitute.
 
Grey Tilefish from North Carolina continue to look amazing and weigh about 6 pounds each.  We are still running with Icelandic Dayboat Cod.  They are currently a better value and the quality is excellent.  We expect to start bringing in Cod from New England soon.  Wild King Salmon from Alaska is available.  We had 25 pound monsters in yesterday, but today we can get 10 to 15 pound fish with the head off and already gutted.  These will produce a terrific yield.
 
Tomorrow is our weekly shot of Sardines from Portugal.  They are always wonderful and tend to fly out the door.  I would order them ahead of time.  Bigeye #1 Tuna came in from Hawaii and looks fantastic.  Pacific Yellowtail (Hiramasa) are absolutely gorgeous this morning.  They weigh between 10 and 20 pounds and will make a terrific special.
 
Florida Red Grouper keep coming in between 5 and 10 pounds and will make a nice sub for Striped Bass.  Unfortunately, Red Snapper doesn't appear to be available for at least a few days.  We brought in more 16/20 Fresh Gulf Shrimp that are always perfect.

Good Morning Chefs and Buyers,
 
We brought in some great local items this morning.  More Tuna and Swordfish came in.  They are both caught in waters between North Carolina and New Jersey.  The same boats brought us head on Mahi Mahi that range in size from 10 to 30 pounds.  Scallops from Cape Cod are set to arrive tonight.  Hard-Shell Maine Lobsters are showing a little break in price.  We might, I repeat, might get some Wild Striped Bass tonight.  But, please leave a substitute.  We are expecting to get our hands on a decent amount of them for Thursday. 
 
Enormous Wild King Salmon from Alaska came in this morning and more are available.  They average about 25 pounds each.  We also have 6 pound Sockeye Salmon from Alaska that look nice today too.  We got a nice shot of East Coast Canadian Oysters today.  Bluepoints are still a problem, unfortunately.  Dayboat Halibut also came our way from eastern Canada.  They range from 10 to 40 pounds. 
 
Golden and Grey Tilefish are here.  They are about 7 pounds each.  The Golden's are in from Florida and the Grey's came our way from North Carolina.  3/4 Chilean Turbot came in looking extra fresh this morning.  We got our hands on some Kona Kompachi that are about 4 pounds each from the South Pacific.  Wild Hiramasa that are 10 to 15 pounds are coming in tonight from the same area.

Good Morning Chefs and Buyers,
 
It's a new week.  Hopefully you had a nice busy weekend and are in need of new great items that are available this morning.  Local Swordfish and Tuna came in today.  These fish come from boats that leave from North Carolina and fish their way up to New Jersey.  This ensures we only get the freshest fish around.  The same boats are bringing us more Local head on Mahi Mahi overnight.  U/10 and 10/20 Scallops are incredibly fresh out of Cape May, New Jersey this morning.
 
A wide variety of Oysters came in this morning from the east coast of the U.S. and Canada.  It looks like Wild Striped Bass availability is going to be a problem for at least a few days.  They aren't catching enough fish to meet demand and this drives the price up too.  Icelandic Dayboat Cod has been fantastic of late and we brought in more of the same great quality fish.  They average around 15 pounds each and are already head off and gutted.  Dayboat Canadian east coast Halibut is in this morning.  These gorgeous fish are anywhere from 10, all the way up to 40 pounds.
 
Panama sent us 5 to 10 pound Red Grouper that look great.  Grey Tilefish is in again from North Carolina and average about 5 pounds.  2 pound and up Red Snapper look like a great choice out of Florida.  We also brought in Louisiana Lump and Jumbo Lump Crabmeat, as well as Fresh 16/20 Gulf Shrimp.

Good Morning Chefs and Buyers,
 
It's time to get your weekend menu together.  We brought in some great staple items and also have a few nice items for specials.  There are a few things we are unsure about regarding their availability.  Soft-Shell Crabs were pretty much a no-show today and we aren't sure if we will see more for the weekend.  Also, Swordfish appears to be tough to come by.  We should have some, but I would recommend ordering in advance.  We brought in beautiful Scallops from Barnegat Bay, NJ this morning.  Head On Local Mahi Mahi look fantastic at 5 to 10 pounds.  We also have larger 10 to 15 pound Head Off Mahi Mahi from Guatemala available.
 
3/4 Chilean Turbot looks great as always.  Greece came through today with plenty of Dorade and Bronzini for the weekend.  Portuguese Sardines came in as expected and look lovely as always.  We are finally getting in more Icelandic Dayboat Cod.  They range from 10 to 14 pounds and should help with the sky high Gloucester Cod prices we've been dealing with all week.
 
Gorgeous Red Grouper came in this morning from Florida.  They are anywhere from 5 to 10 pounds.  Fresh 16/20 Gulf Shrimp look terrific as usual.  We also brought in Grey Tilefish from North Carolina.  These fish are beautiful and weigh between 4 and 8 pounds.
 
Dayboat Canadian Halibut from the east coast came in this morning and we couldn't be happier with these 10 to 40 pounds fish.  Uni has been a problem for the last few days and we aren't positive we will see any for the weekend.  We brought in some delicious varieties of east coast Oysters today.  Fire River and Cooke's Cocktail's are in from New Brunswick, Canada.  Also from Canada, Malpeques are in from Prince Edward Island.  Maine sent us more Taunton Bay Oysters this morning as well.

Good Morning Chefs and Buyers,
 
A new week is here.  Hopefully these rainy days don't stick around much longer.  We brought in some great items today and have more terrific stuff on the way.  Beautiful Cobia from the Carolina's showed up this morning.  The fish are large at around 12 pounds each.  Cape May, New Jersey sent us lovely U/10 and 10/20 Scallops.  Local Swordfish is super fresh this morning.  Black Sea Bass prices made a pretty significant jump over the weekend.  Please check your price list so you don't get surprised.
 
We brought in some new Oysters with a nice price and better flavor.  Malpeque's from Prince Edward Island are fantastic.  They are nice and inexpensive and come in a 125 count box.  Taunton Bay Oysters from Maine and Fire River Oysters from New Brunswick both have nice salinity and mineral levels and are rich in flavor.  Icelandic Dayboat Cod is set to arrive sometime midweek.  Until then, we will be using Gloucester Market Cod.  Dayboat East Coast Canadian Halibut are coming in again tonight.  We could not be happier with the consistency of these 10 to 40 pounders.  Copper River Sockeye Salmon are still going strong and average about 5 pounds each.
 
Wahoo came in again from South America.  These fish are big, but we will happily cut you whatever size piece you need.  Guatemalan Mahi Mahi is incredibly fresh this morning.  They are head on and available in 2 sizes; 5 to 10 and 15 to 20 pounds.  We brought in beautiful Hawaiian Tuna that is available in all grades.  New Zealand Pink Snappers are 2 to 4 pounds and will make a great alternative for small Red Snappers currently being unavailable.  We do however, have nice large 4 to 8 pound Red Snappers from Florida.
 
Florida sent us more great stuff as well.  Red Grouper look nice and weigh between 5 and 10 pounds.  We also brought in more 16/20 Fresh Gulf Shrimp that never disappoint.
