Good Morning Chefs and Buyers,
 
Another busy Spring weekend is coming.  Make sure you are well stocked on all of your customers favorite seafood.  We have some beautiful Local items for you.  Local Head-on Mahi-Mahi came in this morning and is incredibly fresh.  We have Local Yellowfin and Big Eye Tuna today as well.  We had some trouble finding Tuna earlier this week, but we seem to be back on track.  We also have great looking Local Long-Line Swordfish available. 
 
We have some nice specialty options for you as well.  Boston Mackerel came in and looks super fresh.  We also got in some Brazilian Rouget and Smelts.  Any of them will make a great special.  It looks like Fluke is going to be very limited this weekend.  In preparation for this, our buyers tracked down some beautiful George's Bank Flounder.  Unfortunately, All-Leg and Maine Crabmeat will not be available this weekend due to the weather in New England.
 
In addition to our normal Salmon options, we brought in some New Zealand Farmed King Salmon.  The fish look amazing.  We also got in more Copper River King Salmon.  These wild fish store up extra Omega 3 Fatty Acids on their 300 mile trek to spawning grounds.  They are very sustainable and controlled by the Alaskan Department of Fish and Game.
 
Portuguese Sardines are in.  They are only around at the end of the week so stock up if you need them.  We have beautiful Golden Corvina available.  The fish are between 5 and 7 pounds.  We have great Red Grouper from Florida coming in at about 5 pounds a piece.  We also have Ecuadorian Black Grouper.  The fish are close to 50 pounds.  We will happily cut them up to whatever size you need.  We also have a few pieces of Live West Coast Urchin available for tomorrow.  Please call and place your order in advance for these because we have a very limited number coming in tonight.
