Good Morning Chefs and Buyers,
 
We have some wonderful items for you today.  Beautiful Mahi Mahi and Swordfish are here.  Both of these fish are locally caught and look amazing.  The price on the Mahi Mahi is way down.  We also have some super fresh Razor Clams and Steamers from Maine.  It is rare that we have both at the same time.  Normally they will only go after one or another.  Either of these treats will make a great special.
 
East and West Coast Halibut are available in sizes ranging from 10 to 40 pounds.  The quality of these fish has been superb and should continue to be that way for the months to come.  Large and Jumbo Black Seabass are becoming available again.  The size and quality is back to what is expected of these versatile and delicious fish.  Great looking Panama Red Grouper is here.  They are between 5 and 10 pounds. 
 
Unfortunately, Tuna is hard to find right now.  We may have some tomorrow.  We will be getting in a lot for Thursday delivery.  We apologize for any inconvenience.
 
Copper River Wild King Salmon is here.  The Copper River is the 10th largest river in the country.  These Salmon have to travel 300 miles to their spawning grounds.  To be able to handle the journey, they store up extra Omega-3 Fatty Acids.  This makes Copper River King Salmon some of the most sought after Salmon in the world.  Salmon runs are carefully managed for long-term sustainability by the Alaska Dept. of Fish and Game.  They use several counting methods at various points throughout the river to count each Salmon going up river to ensure adequate numbers migrate to the spawning grounds each year.  Delicious, sustainable, and healthy; sounds like a winner to me!
